      • Observation: The insert cooler is missing the top cover. During The inspection the top cover was observed on the floor and not screwed directly into insert cooler unit. The food items in the insert cooler upper portion were at temperatures higher than 4 degrees Celsius (8 degrees Celsius). Installation of the top cover would assist in keeping temperatures lower.

      • Corrective Action(s): Install the cooler top cover for the insert cooler. Installation would assist in keeping the temperatures lower as when salad bar is not in use the cover could be pulled tight.

      • Corrective Action(s): The warmer unit is not a water bath insert hot holding unit but a single heated bottom type. These types of units do not hold heat as well as water insert types in which the hot water envelopes all sides of insert. Monitor temperatures of hot holding unit.
      • EHO will be monitoring unit at each inspection. Unit is to be maintained at temperatures of 60 degrees Celsius or more. Unit will need to be turned up if unit is not capable of maintaining 60 degrees Celsius in food.

      • EHO did observe staff not soaking utensils properly for one minute fully submerged in sink. EHO observed staff using sanitizer pail to soak for sanitizer solution.
      • CORRECTED DURING INSPECTION - EHO demonstrated and instructed proper ware washing which includes 1 minute soak according to manufacturer's directions.

      • Corrective Action(s): Coffee station is to be wiped with 200ppm QUAT or equivalent sanitizer solution. This sanitizer solution is to be used instead of water and replaced when dirty throughout the day.

      • Correction order issued. Facility either get access to building's mop sink, or submit plans to install a mop sink within the facility.

      • Observation: Staff on duty (both of them) indicated they have no access to the janitorial room, which is where the mop sink is.
      • Corrective Action(s): As part of the agreement when approving the existing floor plan to have no mop sink inside facility, facility must have access to the building's janitorial sink at all times. Please discuss with building management, and if in case that's not an option a mop sink must now be installed.
