- Observation (CORRECTED DURING INSPECTION): Discussed manual dishwashing procedures with manager. Plates are washed in soap, rinsed with water, then spray with sanitizer, and air dried at the end.
- Corrective Action(s): Plates must be soaked in sanitizer in second sink for 2 minutes. Spraying sanitizer on plates then wiping with towel does not create the 2-minute contact time required.
