      • At time of inspection:1. Refrigeration / freezer temperature records were not noted as this facility is newly operated.The owner / operator of this facility is requested to conduct the following, namely:1. Ensure refrigeration / freezer temperature records are kept (in a binder) for all appliances within this facility. There should be no more than 24 months of temperature records within this binder.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • At time of inspection:1. All refrigeration temperatures noted were at or below 4c/40F – SATISFACTORY.2. Hot-holding of high-risk foods was not being conducted during inspection.3. There did not appear to be any functional thermometers inside each refrigerator / freezer appliance.The owner / operator of this facility is requested to conduct the following, namely:1. Ensure all refrigeration / freezing appliances contain a functional thermometer within.

      • At time of inspection:1. Chemical test strips did not appear to be available to test the chemical sanitizing solution from the 2-compartment sink (i.e. to verify the concentration of the chlorine bleach sanitizing solution measured 100 PPM).The owner / operator of this facility is requested to conduct the following, namely:1. Obtain chemical (chlorine) test strips for this facility.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • At time of inspection:1. Pest control records were not available as this facility is newly operated.The owner / operator of this facility is requested to conduct the following, namely:1. Ensure one pest control checklist is filled out once (1) per month to ensure pests do not exist within this facility. Ensure all checklists are kept in a binder and made available for review during future inspections. Please note - there should be no more than 24 checklists placed inside this binder.
