      • At time of inspection:1. All refrigeration temperatures noted were at or below 4 Degrees Centigrade - SATISFACTORY.2. The main hot-holding pizza storage unit (located between the kitchen and the front service station) was measuring a maximum temperature of approximately 60F. The operator has indicated that they are aware of this issue and a part has been ordered. The arrival of this part remains pending.The owner / operator of this facility is requested to conduct the following, namely:1. Ensure all pizzas are time-stamped when they go into this unit. Pizzas within this unit should not remain within this appliance for a considerable amount of time (i.e. 30 minutes or greater).

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • At time of inspection:1. The exhaust ventilation suppression system sticker indicates expiry is JUNE OF 2024 – SATISFACTORY.2. A plumbing fixture (attached to the top of the mechanical dishwasher) appeared to be leaking when a cycle was in operation.3. Some baseboard paneling (i.e. underneath the mechanical dishwasher) was not properly fastened to the wall and thus requires repair.The owner / operator of this facility is requested to conduct the following, namely:1. Contact a qualified mechanical dishwasher technician to Inspect the rear plumbing lines on top of this appliance. Once inspection is completed, ensure any necessary repairs are made so this appliance does not leak.2. Contact a qualified professional to make any necessary repairs to the baseboard paneling underneath the mechanical dishwasher.

      • At time of inspection:1. The rear entrance (delivery door) contained a pest entry point at the bottom corner of the door. It appears that the exterior weatherstripping is worn and requires replacement. The owner / operator of this facility is requested to conduct the following, namely:1. Ensure the rear entrance delivery door is sealed at the bottom to help refrain from pest entrance.
