- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Sanitizer was not being used in the facility for counters (food contact surfaces). Sanitizer in dispenser located inside washroom was not active. Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
- Corrective Action: Operator is using a spray bottle with Virex II however the concentration appears to be slightly above 400 ppm which requires a potable water rinse. Change sanitizing solutions as required to always maintain an effective concentration (200 ppm unscented bleach, 200 - 400 ppm QUAT).
- 313 - Live animal on the premises, excluding guide animal in approved areas [s. 25(1)]
- Observation: Observed animal (cat) walking on food service counters. Cats can carry micro-organisms including pathogens that could cross contaminate food and food contact surfaces and cause illness.
- Corrective Action: Operator must ensure that no animals are in the kitchen.
