      • Corrective Action(s): Educated staff on proper manual ware washing using 2-compartment sink. Dishes must be washed with detergent and soap followed by rinsing, sanitizing at 100-200ppm chlorone at the 2nd compartment sink, then air dry. Temporary use manual warewashing method using 2-compartment sink until high-temperature dishwasher has been serviced.

      • Observation (CORRECTED DURING INSPECTION): Many containers of milk and milk alternatives were noted sitting at room temperature in the serving area at the start of inspection (4 L homo milk was noted with internal temperature of 6.8C, 2 L half and half cream was noted with internal temperature of 11.6C).
      • Corrective Action(s): As per staff, the milk were brought out due to the morning rush. Items were returned to the refrigeration unit during the inspection.
      • Facility was not busy upon arrival for inspection, cold potentially hazardous food (e.g. milk) must be immediately stored away when not in active use.

      • Observation (CORRECTED DURING INSPECTION): < 10 PPM chlorine residual detected in the sanitizer spray bottle.
      • Corrective Action(s): Staff refilled with sanitizer spray bottle with bleach and 200 PPM chlorine residual was detected after bottle was refilled. Reminded staff how to attain the proper concentration for bleach (2 tsp of bleach per 1 L water).
      • Staff and operator must ensure that there is always a sanitizer spray bottle near the area of food prep.
      • Operator must also purchase sanitizer test strips to allow staff to determine if adequate concentration is available in the spray bottle.

      • Observation: Soap dispensers were noted broken in one of the customers' washroom and backroom.
