- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): Sanitizer solution was too high, for food contact surfaces please use a bleach water solution at 200ppm. Use chlorine test strips to verify the concentration.
- F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): 1. Wiping clothes used to wipe the steam wands were placed in small dishes at room temperature. Please store all wiping clothes in a sanitizer solution (ie. bleach water mixture of 200ppm) when they're not in use. 2. Do not store ice scoop directly on the ice in the ice machine. Ensure that the handle of the scoop doesn't come into contact with the ice and store it in a separate container or in a scoop holder.
