- 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: Elevated temperature records for the cold display unit were observed and the digital thermometer in the display unit was above 4°C during inspection. Public Health Significance - Operators must ensure that refrigeration units can maintain a temperature of 4°C or less to prevent the growth of disease causing micro-organisms.
- Corrective Action: Adjust the temperature of the cold display unit to achieve and maintain a temperature of 4°C or less. Operator to use an alternate thermometer to take manual temperature readings of the display unit to cross reference it with the temperature readings of the internal digital thermometer.
- 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
- Observation: Small amount of mould was observed on the inner walls of the ice machine at the time of inspection. Public Health Significance - Equipment must be maintained in sanitary condition to prevent potential contamination of food with disease causing organisms that can cause foodborne illness.
- Corrective Action: Operator to clean and sanitize ice machine to rid of mould. Monitor and increase cleaning and sanitizing frequency as needed to prevent future mould growth.
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) A sanitizer (QUATs) spray bottle for use on food-contact surfaces was tested and measured at a concentration below 50 ppm during inspection. Public Health Significance - Sanitizer (QUATs) must be prepared at an effective concentration (200-400 ppm) to eliminate potential pathogens on food-contact surfaces to prevent the spread to food that can lead to foodborne illness.
- Corrective Action: Operator prepared a new sanitizer (QUATs) solution with a concentration that measured at 200 ppm. Monitor the concentration of the sanitizer with QUATs test strips and re-make the solution when the concentration is no longer effective.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: Waste removal schedule was observed to be ineffective as the outdoor dumpster was open and overflowing with garbage during inspection. Public Health Significance - Waste removal schedule must be appropriate for the volume of waste produced to prevent conditions that may attract pests to the facility.
- Corrective Action: Operator to coordinate for increasing frequency of garbage collection or increase amenities for garbage disposal. Monitor the outdoor dumpster to ensure it does not overflow and garbage lid can stay fully closed at all times.
