- Baked wings were being Prepared in the following way:- From frozen - half cooked in oven to roughly 30-40 degrees Celsius.- Cooled to 4 degrees Celsius and stored in the refrigerator. - Fully cooked to order to 74 degrees Celsius. Corporate procedure was consulted as inspector had concerns with half cooking of wings from frozen. The proper procedure is as follows:- Thaw wings from frozen. - Fully Cook wings to 74 degrees Celsius, cool and store in refrigerator.- Cook wings to order to 74 degrees Celsius. Operator educated on proper procedure and was requested that procedure is followed.

- The wall under/behind the pizza dough prep counter nearest to the prep sink is damaged and is no longer smooth non-porous and easy to clean.Repair/refinish wall so that it is smooth non-porous and easy to clean.
