- 0PPM quat measured in one of the sanitizer buckets on the cooking line. Corrected during inspection.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Toppings used during breakfast service (i.e. cheese, ham and bacon) were stored in an improper ice bath. External temperature of the ham was 11.9C, Ensure that foods stored in an ice bath are stored at 4C or less. Ensure that staff are using a proper ice bath and that the ice surrounds the container up to the food level.

- Evidence of vermin activity was observed. A mouse was found in a glue trap serviced in December 2024. Mouse droppings were observed underneath the shelving units located in the dry storage area.***Please clean the mouse droppings and sanitize the area. Please contact the pest control company to monitor the vermin activity and provide the three most recent reports to the undersigned PHI for evaluation.

- There was tape on the handle of the prep cooler. Remove the tape and tape is not cleanable. Ensure that all surfaces are smooth and easy to clean.
