    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • -The staff member in the kitchen was observed handling dishes, wiping counters and touching food without washing their hands. Ensure that hands are washed frequently and between tasks while working in the kitchen.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • -An incompatible activity (living / sleeping quarters, laundry, etc.) is occurring in a food handling or storage area. The kitchen cannot be used as a staff room. Ensure the couch and tables are removed.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • -The kitchen staff removed chicken fingers from the oven without checking the temperature and was not able to say what the correct temperature for cooking is. The internal temperature was measured at 69C, which is not hot enough. The staff member put the chicken back in the oven to be cooked to an internal temperature of 74C.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • -Adequate records of pest control measures are not being maintained. Ensure pest control records are maintained.
