      • - behind the upright cooler in back storage room
      • - in the dry storage area, around the hot water tank, in the bottled drink boxes
      • - beside the stainless steel cooler
      • Corrective Action(s): Thoroughly clean and sanitize the above noted areas. Make sure to:
      • - monitor the pest activity in kitchen area
      • - proving sweeps under the door of dry storage area
      • - storage practices of bottled drink - either move them to upper levels from the floor or store them in pest proof containers or bins
      • *This is important to follow to prevent pests from accessing food in kitchen area and avoiding any potential food contamination risks.

      • Corrective Action(s): Clean up droppings and monitor for rodent activity. Consult pest control as needed. Install door sweep at entrance. Seal gaps and holes if observed to prevent potential rodent entry. Clean and sanitize all food prep surfaces before starting food prep each day.

      • Continue to use 2 compartment sink method with your Quat sanitizer.
      • Items that cannot fit the sink or the dishwasher (e.g. large bowls, large pans) and other equipment not intended to be submerged should follow the appropriate clean in place procedure discussed using your Quat sanitizer.

      • It has been temporarily patched. Some water is on the floor adjacent.

      • Dishwasher is also connected to this drain.
      • Corrective Action(s): Ensure that drain is checked for leaks and properly fixed.
      • Ensure this cabinet and the floor adjacent is cleaned and sanitized.
      • Dry, paint and seal cabinet and monitor area for mold growth.

      • - Clean and maintain floor free of food debris, specialy under and behind equipment.
      • - Use ant bait to reduce the numbers.
      • - Ensure to sanitize food contact surfaces that may ants have access to.

      • Observation: High-Temp mechanical dishwasher not in operation. Operator stated that she was told the dishwasher does not work. Operator washes and sanitizes dishware in 2 comp sink. Operator explained dishware washing procedure and it aprears proper procedure is followed.
      • Corrective Action(s): Test run the mechanical dishwasher to ensure it works and reaches required sanitation temperature of 71 degree C at the dish surface. Contact your health inspector to discuss requirements after.

      • Observation (CORRECTED DURING INSPECTION): Quat sanitizer measured less than 200 PPM residual.
      • Corrective Action(s): Ensure that it is tested with the test strips provided, when the sanitizer is at room temperature for an accurate reading. Also, the product bottle claims that it requires a potable water rinse after sanitizing. A no rinse sanitizer is required for all food contact surfaces. Waiting on clarification from manufacturer that this product can be used as a no rinse sanitizer at 200 PPM quat residual. Until such time, an alternative product is being used.
