      • Observation (CORRECTED DURING INSPECTION): Chopped mushrooms stored at 13 degree C in pizza prep cooler inserts. Inserts noted overfilled with food. Mushrooms were chopped and stored from the morning. (more than 4 hours).Chopped mushroom were discarded at the time of this inspection.
      • Corrective Action(s):
      • Do not overfill inserts so that temperature is consistant throughout the food.
      • Ensure to measure food temperature every 4 hours and record in your temperature monitoring log. If food temperature is above 4 degree C for more than 2 hours, discard food.

      • Observation: 1- Retrofitted lids on pizza prep cooler has not been repaired. Lids do not properly cover food. Lids are sliding around and food exposed to room temp is warmer than it should be.
      • 2- It also noted one ceiling tile is missing above food prep table.
      • Corrective Action(s): 1- Ensure to repair/replace the lids so that they completely cover food in inserts and closed properly withhout sliding side to side.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer was not available at the time of inspection. Spray bottles available but no sanitizers inside them. Operator made bleach water 100-200 ppm solution at the time of this insection and provided in front and in kitchen for use.
      • Corrective Action(s): Enure to refresh the bleach-water sanitizer every two days or as needed. 1 cap full of unscented house hold bleach in 4 Litre (1 Gallon) of water. Ensure to test with paper test for the 100-200 ppm. If strong dilute with coldwater.
      • Safety note: Do not mix detergent with bleach for dish washing.

      • 2- pizza prep table does not have proper lid to cover the food in inserts.
      • Corrective Action(s): Provide proper lid over the inserts. Ensure the plate underneath extend all the way to the end so that food below is protected from contaminants. Ensure also temperature in inserts reaches at or below 4 degree C.

      • Observation: Cutting boards, dishware, food containers etc. not washed and sanitized properly. Sanitizer not used to sanitize dishware in three -compartment sink. Operator utilizes the sanitizer compartment of the 3- comp sink to store dishware and other items. This is unsanitary.
      • Corrective Action(s): Remove all items from the sanitizing compartment of the three- compartment sink. Thoroughly wash and sanitize the sink. Make bleach solution 50-100 ppm in the sink compartment and sanitize all dishware after washing and rinsing.

      • Observation (CORRECTED DURING INSPECTION): 1- No liquid soap and paper towel available at hand washing stations at the time of inspection. Operator provided liquid soap and paper towels at each stations. Hand washing stations are to be supplied with liquid soap and paper towels at all times when kitchen is in operation.
      • 2- A colander of cooked rice was stored in the H.W. sink. Operator removed the rice at the time of inspection. Hand washing sinks are to be used only for hand washing and not storing food. Hand washing sink must remain unobstructed.

      • Observation: It was observed that staff did not wash hands before preparing and cutting mushrooms and/or handling other food. Importance of hand washing were discussed.

      • 2- Plastic covers observed on stainless steel splashes and counters. This create surfaces that are not easy to clean and maintain.
      • 3- Grease build up observed at exhaust fan above the pizza oven. This is a fire hazard.
      • Corrective Action(s): 1- Thoroughly clean the floor, back splashes, equipment faces and fridge door handles. Clean back splash behind the oven. Remove protective plastic cover from stainless steel surfaces. Ensure to sanitize surfaces that clean dishware are stored.
      • 2- Remove all plastic protective covers from all stainless steel surfaces so that it is easy to clean.
      • 3- clean the grease from the fan hood above the pizza oven.
