- Observation (CORRECTED DURING INSPECTION): Dishwasher unit malfunctioning. Final sanitizing rinse after 30 minutes was 67-68 degrees Celsius.
- Alternative solution was to use Chlorine solution at rinse dispenser. This did not dispense chlorine at appropriate levels - levels observed at the plate were less than 50ppm chlorine.

- Corrective Action(s): ****Dishwasher repair needs to occur immediately. This is the highest priority today.
- 1) Discussion with Supervisor regarding replacement of rinse cycle with sanitizer solution however once this occurred it was NOT a viable option as sanitizer levels were less than 50 ppm Chlorine at the plate. The machine is not set up to replace rinse aid with sanitizer solution as the machine does not dispense at a high enough concentration to achieve a final sanitizing rinse. Discuss with staff and Management - DO NOT USE THIS AS AN ALTERNATIVE SANITIZING RINSE
