- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- 1. Dishwasher measured 0ppm chlorine. Ensure dishwasher is able to supply 100ppm chlorine.2. Facility is frothing milk and making milk based espresso drinks but only has a 1 compartment sink and a dishwasher. Remove espresso machine. If facility wishes to continue to make milk based espresso drinks they will need to have a two compartment sink, dishwasher in back and hand sink in front. Facility will also need to send plans of installation, sizes of sinks and gain health approval.

- Facility is not testing dishwasher daily. Ensure dishwasher concentration is tested daily.

- Facility is making milk based espresso drinks at front counter without access to a hand sink. Install hand sink. See violation regarding dishwashing for specific instructions.

- Facility was making milk based espresso drinks which is contrary to their permit restrictions. Cease making milk based espresso drinks.
