      • Cleaning cloths were observed on food contact surfaces throughout the facility with no sanitizer residue detected in them/in buckets of sanitizing solution. - Ensure cleaning cloths are submerged in buckets of sanitizer solution at the correct concentration between use or have adequate sanitizing solution residue in them at all times during food processing to kill harmful microbes.

      • A bowl without handle used as a scoop was observed to be stored inside a container of sugar in the back preparation area.-Ensure that scoops have handles and are stored in such a manner that the handles do not come in contact with food items.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There is a significant leak from the condenser in the walk-in cooler. The liquid is leaking onto the food stored below. A technician arrived onsite at the time of the inspection to address the issue. Ensure all food affected by the leak is discarded. Unopened packaged food can be salvaged, as long as it can be cleaned and sanitized. Inspect for package integrity, discard if compromised.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cutting board in the back area has deep grooves with buildup of grime in between. Food equipment must be maintained in a manner that is easily cleanable. Inspect the cutting boards prior to use and ensure it can be cleaned to remove contamination. The operator discarded the cutting board and replaced it with another at the time of the inspection.
