      • The following areas require some minor cleaning:-one side of the deep fryer. -one side of the freezer near the deep fryer. -patches of the floor around corners and under equipment. -garbage can. Ensure all areas of the kitchen are maintained in a clean and sanitary condition.Update on May 20, 2026: The above violation is outstanding.

      • Used sponges and steel wool are noted in the dishwashing area. Ensure all sponges, steel wool and scrubs pads are discarded after-use as these products are porous and uncleanable.Two sponges and one steel wool were discarded at the time of the inspection by the operator and PHI.

      • The knob on the meat slicer is cracked, making it difficult to clean. Please repair the meat slicer knob and ensure all equipment is in good repair.

      • The following areas require some cleaning:-The green tiered rack holding clean dishes. -Edge of the ice machine. -The back door. -Wall by the ketchup dispenser. Please clean the indicated areas and ensure all surfaces, wall and floors are maintained in a clean and sanitary condition.

      • 1. Cleaning cloths are stored on the countertops. Staff indicated the cloths are used for several hours.2. A used sponge is noted in the dishwashing area. 1. Please ensure cleaning cloths are stored in a bucket filled with a food-safe sanitizer. Please exchange the sanitizer solution every 4 hours or more often as required. Staff placed the cleaning cloths in a QUAT sanitizer bucket during the inspection. ** It is recommended to place a sanitizer bucket at each workstation for easy accessibility. **2. Please discard sponges after use. Please ensure all items used for cleaning food contact surfaces can be washed and sanitized after use. Staff discarded the sponge during the inspection.

      • Meat sauce is thawing in a water bath on the counter at room temperature, Please ensure high-risk food products are thawed in one of the following ways:A) Under cold running water in the sink.B) In the fridge.C) In the microwave and immediately cooked.Staff placed the meat sauce in the fridge during the inspection.
