      • The temperature display gauge on Gastromorm 90 refrigerator is not functioning. - Ensure all equipment (such as the temperature display gauges on fridges) are operational and maintained in good repair. - Alternatively, a thermometer can be placed in the refrigerator.

      • Ham was left sitting on the prep table at room temperature.According to staff the ham was out for about 45 minutes. The ham was probed and was noted at a and safe temperature range.Staff returned the ham to the refrigerator.Ensure high-risk foods, such as ham, are stored at 4 degrees Celsius and below. Alternatively, if foods are kept at room temperature, discard every 2 hours. Ensure the foods are labelled with the date, time the product was removed from the fridge and the time it must be discarded.

      • - The door of the storage room has a faulty lock, and duct tapes are used to hold the lock.Tape is uncleanable and can trap germs.Ensure all locks on doors are maintained in good repair and are installed as per manufacturer’s instructions.

Please do one of the following: Work within the permit restriction by cooking and serving chicken wings per order, or have the facility permit restrictions moved to extensive food handling and designate one of the compartments on the three-compartment sink as a handwashing sink.
