- - The high-temperature dishwasher in the deli section was not drawing water and, as a result, was not sanitizing the dishes.*Staff will manually sanitize the dishes using the sinks. All dishes previously sanitized with the dishwasher must be washed, rinsed and sanitized before use.** Please ensure that all equipment is properly sanitized in the dishwashing sink, and that the dishwasher is repaired promptly

- 1) No waterproof thermometer was available onsite to verify the dishwasher temperature.*Please ensure that a waterproof thermometer with a maximum tab is available and verify the water temperature at the dish level daily. The temperature at the dish level must be at or above 71°C.2) Quats test strips were expired.*Please ensure that approved-valid sanitizer test strips are kept on-site to measure the sanitizer concentration of the food safe sanitizer. The recommended QUATS based sanitizer concentration is 200 ppm.

- A plastic cup with no handle was left in the bulk sugar container. Cross-contamination from handling the cup to the sugar is a health risk. Operator got rid of the cup. Please use utensils with handles, and if they are stored in the container, ensure the handle is out of the product.
