- 206 - Critical Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
- Observation: Salmosa hot holding unit temperature was measured at 56.2°C and food was out for in unit for 30 minutes. Temperature was set at 80°C for unit but it was not able to maintain 60°C. Potentially hazardous foods must be stored at above 60°C to limit pathogen growth.
- Corrective Action: Unit was turned up and able to reach 60°C. Operator obtain accuarate themometer for hot holding unit.
- 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
- Observation: Inadequate facilities provided for hand washing. Operator using 3 compartment sink for handwashing. No paper towel and soap availble at hand washing sink. Handwashing is an important practice to ensure food are protected from cross contamination from other previously handled foods or contact surfaces.
- Corrective Action: Operator must ensure that their 3 compartment sink is only used for dishwashing and handwashing sink is stock with soap and paper towel.
