      • Observation: Drawer cooler went down to 44F. Then went back up to 50F. Defrosting food (sausages) in this cooler still cold at <40F.
      • Corrective Action(s): Use the drawer cooler for storing higher risk foods only if it will keep them at 4C/ 40F or colder. If temperature does not go down, store only low risk foods or store food only for 2 hours maximum in this cooler. Food in drawers moved to alternate cooler during inspection. Provide an additional accurate indicating thermometer for the drawer cooler. Check several times per day.

      • Corrective Action(s): Provide hand soap at this hand sink and a dispenser or basket for paper towels. This will make it easier for staff in this area to wash hands. Until then, use an alternate hand sink.
