      • ***There was a cleaning cloth draped over the head of a sanitizer spray bottle. Discussed that this was not effective in keeping the cleaning cloth clean and sanitary for use on food contact surfaces. It was removed to the bucket of sanitizer during the inspection.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • *Discussed ensuring that the inserts/equipment from the dishwasher was allowed to air dry before being stacked. Having the inserts stacked wet will not allow them to dry and may allow growth on the wet surfaces. Corrected during the inspection. The wet inserts were spread out. Once dry they can be stacked up for compact storage.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Holes were noted in the ceiling throughout the facility. Please seal all these holes. 2. The drop ceiling tiles of the dry storage area were noted to be porous. Please replace the ceiling tiles and ensure that they are maintained in a smooth, easy-to-clean and moisture resistant state. 3. A backsplash was noted to be missing behind the server area sink.Please install the missing backsplash. 4. Wall damage was noted on the walls of the dry storage area. Please repair all damage areas and paint them. 5. Holes were noted in the shelving units, and walls where the plumbing lines were capped. Please seal all these holes.

      • Ice buildup was noted in the walk-in-freezer and the small freezer. Please repair both freezers.
