- The wooden prep table in the kitchen had gaps. Please refinish or seal the table to ensure it is smooth, non-absorbent, and easily cleanable.Jan 8/26 - The facility was temporarily using cutting boards placed on top of the table for food preparation.

- No sanitizer solution was readily available. Ensure that sanitizer solution(s) are available at all times. Please ensure surfaces are sanitized after cleaning. The operator prepared several spray bottles of chlorine bleach sanitizer solution. Chlorine was then measured at 250 ppm.

- Internal monitoring thermometers were not observed in most coolers. Please ensure all coolers are equipped with internal monitoring thermometers to verify temperatures.

- Outstanding - Facility was not equipped with records showing the completion of monthly pest control inspections. ** If records are available, submit records to PHI via email. - - Food debris was noted on the sides and in the gaps/crevices of the dough sheeter machine. Please clean thoroughly and maintain.- Food debris was noted along the edges of coolers and freezer in the kitchen. Please clean and maintain regularly.

- Outstanding: December 12/20231. Gap observed under the backdoor. ** Repair or replace weatherstripping2. Pest control records were not available for review during the inspection. Operator noted that an external company conducts monthly inspection.** Submit the most recent pest control report. 2023-02-27Gap not yet repaired. New windows were being installed in the front customer area at the time of inspection. Construction & repairs are still underway.Pest control records not yet available/reviewed.
