      • Bleach sanitizer observed greater than 200 ppm. Solution used on food contact surfaces and equipment should be maintained at 100 ppm.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher measured 68.8C with PHI's min/max thermometer. Please ensure final rinse temperature is at least 71C at plate level (and 82C/180F on the dish machine gauge).
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips were not observed at the time of inspection. Please ensure that test strips available to verify that the chlorine sanitizer solution concentration is at 100 ppm.
