- Observation: Small fruit/drain fly population observed at the back of the store by the sinks and floor drains. Noted the grease trap access lid is not tight and may allow entry of flies for food source/breeding purposes, depending on whether there is direct access or a second lid on the grease trap itself. Also noted sticky fly tape in back area above food storage area.
- Corrective Action(s): - At the end of the day, apply very hot water to all floor drains and the mop sink drain. Then spray any chemical to the floor drain and leave. Repeat daily due to short breeding cycle of flies.
- - Make sure all stagant water is removed at the end of the day.
- - Remove sticky traps from food storage and prep areas as discussed.
- - Check grease trap lid and make sure the seal is tight to prevent entry.

- Observation (CORRECTED DURING INSPECTION): Quats sanitizer measured at or below 100 ppm at auto dispenser. Concentrate bottle empty. Nominal amount of chemical spuddering through system so likely recent. Discussed with staff. Replaced bottle.
- Corrective Action(s): Make sure staff are checking daily and if concentrate bottle running low have replacement bottle close and ready.
- Bottle replaced and checked. Staff emptied rack sink and refilled to re-sanitize baking racks. Good.

- Observation (CORRECTED DURING INSPECTION): Sinks not set up for dishwashing processes. Wash sink set up, but sanitizing sink not set up. Observed dishes improperly washed and sanitized.
- Corrective Action(s): Make sure to set up at least the wash and sanitize sinks for ad hoc dishwashing through the day. OK to leave middle sink empty and to rinse with spray nozzle if this sink deemed necessary for use throughout day. Fill and drain as necessary. Discussed with staff. OK.

- Observation (CORRECTED DURING INSPECTION): Staff washing hands at back dish sink (no soap or paper towels). Potential cross contamination of dishes. Also, staff then used cloth/apron on person.
- Corrective Action(s): Discussed with staff proper dishwashing and drying procedures and the importance of using handwash station for such purpose. OK.
