     • Observation: Mouse activity noted in facility including droppings on some shelves, on the hot dog roller unit, and inside one of the plastic bins (left on counter), and on the floor in corners. Difficult to determine how long the droppings were there, thus how active this space is for rodent activity.
     • Corrective Action(s): Discard all contents of plastic bin on counter. Make sure staff properly clean and sanitize all surfaces and equipment, including those noted above.

     • Corrective Action(s): Turned up unit and moving towards 60 minimum holding temp. Monitor and continue to adjust dial and verify temperature in unit is at 60 C. Probe thermometer available.
