- Observation: Sanitizer auto feed for quats at dish sink does not appear to work. Lid to concentrate broken and system unable to create vacuum. As such not mixing with incoming water. Measured at 0 ppm to 50 ppm. Must be 200 to 400 ppm. Spray bottles also measured less than 50 ppm. Sink filled and quats manually added to sink. Measured 400 ppm. Added to spray bottles and diluted to 1/2 concentration.
- Corrective Action(s): Have unit serviced such that it can maintain mixing concentration at 200 ppm to 400 ppm.
- As temporary measure, manually add approximately 1/2 cup opf concentrate to full sink of water to obtain 400 ppm range. Until fixed only fill spray bottles from sink solution.
- **Make sure you regularly check sanitizer levels with test strips provided by chemical company.
- Follow up on date noted in report.

- Observation: Ants noted, especially along the pizza prep station wall. Multiple locations. Reviewed pest log from previous inspection with no note of ant activity.
- Corrective Action(s): Once floor is sufficiently cleaned, make sure to advise pest control of issue and target control and exclusion efforts accordingly.

- Observation: Floor observed with build up of dirty dried up flour film, especially around legs of equipment, but also noted accumulations outside of normal foot traffic pathways.
- Multiple days build up of flour and food debris along wall at pizza prep.
- Corrective Action(s): The floor needs a thorough reset cleaning throughout premises. Make sure staff are completing the assigned cleaning duties in an adequate manner and on an acceptable frequency to prevent any future build up.
