      • Corrective Action(s): Make sure to include this concession in comprehensive rodent access control plan as discussed. Make sure food is protected from contamination.

      • Observation: Mouse activity noted in concession, especially at Hot Water Tank, but also at grease trap and along associated walls. Expanding foam been eaten away at both locations where holes in walls exist.
      • Corrective Action(s): Staff must clean and sanitize all surfaces including secondary shelves before each event and after each event. Build into SOP's.

      • Observation: Mouse activity noticeable - droppings on floor in corners and hard to reach areas (moderate); Pest Control recently in.
      • Corrective Action(s): Improve cleaning in this concession - Both frequency and quality of cleaning must be improved to better monitor for rodent pathways and activity.
      • Identify and block off rodent access points including - electrical and plumbing conduits exiting walls etc.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Areas of the concession floor observed with accumulations of food debris and greases or oils from deep friers. Mouse trap in area flooded in oils. Painted concrete floor beginning to bubble and peel or flake off in many areas of concession. Oils contributing to deterioration.
      • Corrective Action(s): Improve cleaning practices in this concession including the improved systematic removal of spilled oils at the end of the day.
      • **Plan for the remediation of the painted floor. Next off season or sooner recommended.

      • Observation: Some areas including the floor in dry staorage and by the deep friers needs cleaning. Some work surfaces need cleaning.
      • Corrective Action(s): Clean kitchen area completely after use, not before next use. Make sure if cardboard is used to intercept some debris it is discarded daily or don't use.
