      • Observation (CORRECTED DURING INSPECTION): Ice scoops stored directly on top of counter near the ice machine and not in a sanitary manner.
      • Corrective Action(s): Staff placed the ice scoops in the dishwashing machine and once they were thoroughly cleaned and sanitized were placed in a bucket.

      • Observation (CORRECTED DURING INSPECTION): All the handwashing station (there are two dedicated handwashing stations and one in place at the dishwashing sink) in the back kitchen was obstructed.
      • Handwashing station by the prep coolers obstructed by drawer shelving
      • Handwashing station by the bar prep cooler where the glasses are obstructed by glasses soaking in bucket
      • Dishwashing sink in use and filled with dirty dishes - unable to be used for handwashing for staff.
      • Corrective Action(s): Do not obstruct dedicated handwashing stations in the kitchen. This promotes improper handwashing practices and improper glove use.
      • Staff removed the obstructions once instructed. Please ensure at least 2 of the 3 handwashing stations are available at all times in the kitchen area.

      • Observation: 1. Double stacking observed at insert level of prep cooler. This prevents proper airflow to the top level which means prep cooler may not be able to hold food at 4C and below
      • 2. Double stacking without covering food observed. Bottom of container may contaminate food underneath when stacked on.
      • Corrective Action(s): DO NOT double stack containers without proper covers.
      • DO NOT double stack at insert levels of the prep cooler.

      • Observation (CORRECTED DURING INSPECTION): QUAT sanitizer tested to be at 0 ppm of QUAT at front and back bucket, as well as milk shake mixing rod sanitizer. QUAT sanitizer dispenser is not properly sucking up the sanitizer into the system. Also, the chemicals put in as the sanitizer is not QUAT based sanitizer
      • Corrective Action(s): Required operator to put in a proper sanitizer into the dispensing system. Ensure that sanitizer is pumped into the system in the appropriate amount so that the sanitizer is at 200 ppm when dispensed from the machine. Meanwhile, operator must use bleach to sanitize all food contact surfaces.

      • Corrective Action(s): Sanitizer bottle was almost empty, bottle changed and then primed. Dishwasher now testing at 50ppm Cl. Be sure to keep an eye on the chlorine level and test your unit regularly with test strips.

      • Ice cream scoops are being left in a bucket of water
      • Milk shake mixer is being rinsed with hot soap water
      • 2. Sanitizer buckets at 0ppm Cl
      • Corrective Action(s): Food safety plan and sanitation plan have not been updated. Submit updates to food safety plan and sanitation plan.
      • Ice cream scoops must either be stored in a dipper well or a washed and sanitized scoops is to be used every time. Do not leave scoops in stagnant water after use.
      • Milkshake mixer is to be rinsed with sanitizer after every use - Place a milkshake cup of sanitizer at the front and run the mixer in the sanitizer after each use.
      • 2. Sanitizer buckets changed to Quats and tested at 200ppm. Ensure there is clear communication with staff when sanitizer runs out. Be sure to switch to an appropriate sanitizer, do not simply use hot soapy water as this is not a sanitizer.
