Yogurt cartons (singel-serve), milk in milk dispenser, and commercial-mix waffle batter all measured at above 4°C at breakfast bar. Yogurt 18°C. Milk 12.5°C. Waffle bater 17.8°C →PHF must be kept at 4°C or below under 4 hours. Operator was requested to discard.
      • Corrective Action(s): Corrected during inspection (discarded). Recommended procedure to be developed for his other staff. Please acquire thermemter to check temperatures.

      • Corrective Action(s): Ensure only an approved sanitizer is used on food contact surfaces (i.e. Quats at 200ppm, Chlorine sanitizer [Bleach] at 100ppm).
      • Manager sent out a staff member to obtain a bottle of bleach for the interim. To prepare a chlorine sanitizer using bleach: 1tsp for 1L of water. Be sure to refresh the spray bottle at least daily as well.
