    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Sandwich ingredients in compartments (ice packs kept below the compartments) on top of prep table measured 7 - 9C internal temperature using probe thermometer. Operator stated it had been approximately 2 hours since they were kept out; no temperature monitoring in place.
      • Corrective Action(s): Operator voluntarily discarded the sandwich ingredients at time of inspection as per their standard procedures. Please store all potentialy hazardous foods at or below 4C. Ice water baths must be used by submerging the compartments in ice water with frequent replacement and temperatures must be monitored at least every 2 hours.

    • 203 - Food not cooled in an acceptable manner [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): Internal temperature of baked potentially hazardous food items registered <60 deg C and were stored at room temperature for <2 hours. Operator stated the baked potentially hazardous food items were cooling down before they are placed in cooler and freezer.
      • Corrective Action(s): Operator transferred the baked potentially hazardous food items to a working walk-in cooler unit that registered at or below 4 deg C. Reminder: for adequate cooling, ensure that potentially hazardous items are cooled from 60 deg C to 20 deg C in 2 hours and from 20 deg C to 4 deg C within an additional 4 hours.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation (CORRECTED DURING INSPECTION): At the start of the inspection large garage door was open. The screen door on the garage door was not able to completely seal the opening which can allow pests into the facility.
      • Corrective Action(s): The operator closed the garage door during the inspection. Repair the screen door such that if the garage door is open, the screen completely seals the opening to ensure that pests do not enter the facility.
