      • Please obtain test strips for the sanitizer. At the time, there was bleach present. If you are planning to use bleach, obtain chlorine test strips and ensure the concentration is between 100-200ppm.

      • Three compartment sink did not have hot water. Bleach and cold water were present. Ensure there is dish soap for cleaning.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Hand sink had soap and cold water. The hand sink requires paper towels and hot water as well. Either mount or place the paper towels by the sink.
    • 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • Ensure there is hot and cold running water at all the sink basins.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The wall behind the three compartment sink should have a backsplash installed to prevent deterioration of the wall.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Please remove the personal items on the kitchen counter to make room for assembly of sandwiches.
