    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Initially, the temperature of a line cooler opposite the deep fryer was measured at 14C, and the cooler temperature dropped to 8C by the end of the inspection. Frequent opening and closing of the cooler door at lunch rush may have resulted to the cooler temperature rise.The operator was told to monitor the cooler temperature and if it doesn't drop to 4C or less within 2 hours, then all perishable foods are to be move to another cooler and the cooler be fixed/repaired.

      • Initially, no sanitizer (zero ppm chlorine) was measured at plate level in the Sani cycle of the low temperature dishwasher.A bleach container with degrade concentration connected to the dishwasher was replaced with a new concentrated bleach container, the equipment was primed by a kitchen staff, couple of cycles ran and 100ppm chlorine was measured at plate level in the Sanitize cycle.

      • There are gaps on the kitchen exit door that opens to the garage.Install proper weather stripping on the kitchen exit door to prevent pest entry into the facility.
