    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • No - there was no indication of completion of professional cleaning of the exhaust hood canopy in the main kitchen, with observation of significant accumulation of grease/oil deposits on some of the filters. The operator is to ensure professional cleaning of the exhaust hood canopy is scheduled at least once every six months (with the filters washed by staff at least once a week, or more as necessary - with use of manual dishwashing and/or pressure-hose washing at car wash, etc).Also, there was lack of adequate storage space in the walk-in cooler/freezer units with additional shelving required (so that all food products are stored at least six inches (15cm) off the floor and onto racks, shelves, or pallets).
