      • Observation (CORRECTED DURING INSPECTION):
      • Front service handwashing sink had no paper towels and an empty soap dispenser. Staff are unable to wash their hands properly.
      • Corrective Action(s):
      • Immediately fill the paper towel and soap dispenser with keep them full at all times. During the inspection, paper towel was placed adjacent to the sink, and the soap dispenser was filled.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation:
      • A few mice droppings found on the floor in the walk-in-cooler and on the wooden pallets storing bottled drinks. Droppings carry diseases.
      • Corrective Action(s):
      • Clean up the mice droppings and sanitize all surfaces, that came into contact with the droppings, with a bleach solution (1 tsp bleach in 1L of water). Keep monitoring for mice activity using mechanical means (traps, glueboards).

      • Observation:
      • The door sweep at the base of the walk-in-cooler was broken in one section. This is allowing cold air to continuously leak out, and may allow pests into the cooler.
      • Corrective Action(s):
      • Install a new door guard/sweep on the base of the walk-in-cooler door to keep cold air in and exclude pests.

      • Observation:
      • 1) Bucket below the pop dispensing machine is collecting pop from the drain pan. The pooling pop will attract and breed flies and mice.
      • 2) Bin below the exhasut canopy is collecting water from a leak in the roof. The pooling water will attract and breed flies and mice.
      • Corrective Action(s):
      • Empty the bucket and bin every night, and wash the bucket and bin in the dishwasher to remove any food debris.

      • Observation:
      • The kitchen floor has accumulated food and debris on it. This will attract pests.
      • Corrective Action(s):
      • 1) A deep scrubbing and cleaning of the kitchen floor requires to be done. Use hot water and degreaser to clean the floor. Ensure the floor under all shelving units, equipment (oven, deep fryers, etc.), sinks (dishwashing sink), and along the base of all walls are scrubbed clean. Increase the frequency this is done.

      • 2) Purchase more shelving units so all flats of bottled water and drinks are stored off the floor. This will encourage and allow staff to clean the floor, especially along the base of walls.

      • Observation:
      • At time of the inspection, there were no staff members that possessed a valid FoodSafe level 1 certificate. There also must be one staff present that has the knowledge on processing and handling food safely.
      • Corrective Action(s):
      • Have the manager and staff enroll and obtain the FoodSafe level 1 certificate, or a recognized equivalent course.

      • Observation: 1) The exhaust hood filters have accumulated grease and dust on them. The dust could fall into food and contaminate it.
      • 2) There is accumulated dust on the wall and ceiling above the exhaust canopy. The dust could into food and contaminate it.
      • 3) General food stains on equipment, floor and walls in the kitchen. This will attract pests.
      • Corrective Action(s): Clean all the mentioned areas. A good, thorough srub and cleaning of the kitchen (from floor to ceiling) is needed to remove dust, grease, and food stains. Recommend making a daily schedule to clean one hard to reach area or piece of equipment. This will divide the work up easier.

      • Observation: Bait boxes with rodent poison found in the kitchen. Rodent poison is a chemical and will be transferred to food contact surfaces from rodents' paws.
      • Corrective Action(s): Immediately remove all bait boxes from the premises and only use mechanical (snap traps, metal tins, glue boards, etc.) means to monitor/eliminate rodents.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): "Simple Green D, Pro 3D" chemical sanitizer is being used as a multipurpose cleaner/sanitizer on surfaces in the kitchen and/or food contact surfaces. This product is a Quats based sanitizer, and shall ONLY be used on non-food contact surfaces, as per manufacturer's label. This product is not a soap/degreaser so it will not remove grease or food debris. As well, the use of the product on food contact surfaces could potentially poison patrons.
      • Corrective Action(s): Immediately stop using "Simple Green D, Pro 3D" product in/on food contact surfaces or in the kitchen. Immediately purchase bleach and use as a sanitizer on food contact surfaces. Mix 1Tbsp of bleach with 4L of water (or 1/2 Tsp of bleach in 500mL of water) to make a sanitize solution with a [Cl2] between 100-200ppm. This can also be used to sanitize dishes that are washed manually. During the inspection, supervisor had staff go out to purchase a bottle of bleach.

      • Observation (CORRECTED DURING INSPECTION): Found rodent dropping in the kitchen along the base of some walls, and in a cupboard in the front food service counter. Rodents will spread diseases via their feet. Staff explained that they had a concern with rodents, but rid of them in February 2022.
      • Corrective Action(s): Clean up all rodent droppings and sanitize the surfaces. Remove all items in all cupboards, clean and sanitize the cupboards, and then put the items back into the cupboards.
      • **Correction date: May 3/22**

      • Observation: Food stains and grease found on the floor of the kitchen, on the walls (on the white FRP), on shelves, and on legs of equipment and shelves. This will attract pests.
      • Corrective Action(s): A deep and detailed cleaning of the mentioned areas is required. The following must be done:
      • 1) Purchase a degraser soap that is safe to use in/on food surfaces.
      • 2) Use a degreaser soap, hot water, and a scrub brush to remove the food and grease on the mentioned areas.
      • 3) Move all items (equipment, shelves, food containers, etc.) away from walls and off the floor so these surfaces can be cleaned.
