    • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION):
      • Handwashing sink was blocked with containers stored in the sink. Staff were unable to access and wash their hands. During the inspection, staff did not wash their hands at all and they completed multiple tasks.
      • Corrective Action(s):
      • Immediately remove all items out of the sink and make it accessible at all times. During the inspection, all items were removed from the sink.

      • 402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
      • Observation (CORRECTED DURING INSPECTION):
      • During the inspection, staff members were observed NOT washing their hands after changing tasks. Pathogens from raw proteins are contaminating surfaces and other food items, which will cause people to get ill.
      • Corrective Action(s):
      • Immediately have staff wash their hands and retrain staff when to wash their hands. During the inspection, all staff washed their hands.

      • Observation (CORRECTED DURING INSPECTION):
      • Observed staff grabbing raw pieces of seafood and meat from the assembly cooler with their bare hands instead of using utensils. Staff are introducing germs into the containers or food and contaminating other surfaces when they touch it with their dirty hands.
      • Corrective Action(s):
      • Immediately place tongs or spoons in each food insert so staff use the utensils to handle the food. During the inspection, staff placed a spoon in each food insert.

      • 210 - Food not thawed in an acceptable manner [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION):
      • Raw pieces of chicken and pork were on the prep table at 6C. Staff indicated that they were thawing the meat out. This is an unsafe process to thaw meat, as pathogens will grow on the outside of the meat as it warms up above 4C.
      • Corrective Action(s):
      • Immediately put the meat in the cooler. Only thaw meat under cold running water or in the fridge. During the inspection, staff placed the eat in the cooler.
      • WARNING: If any foods are found to be stored or thawed in the danger zone (4C-60C), the food will be thrown away>

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation:
      • 1) The exhaust filters had accumulated grease on them, which could drop into food.
      • 2) The ceiling tiles have accumulated dust on them, which could drop into food.
      • 3) Wiping cloths are being stored on prep tables at room temperature. This will allow bacteria to multiply on them and you will be spreading more germs around when you use the cloth.
      • Corrective Action(s):
      • 1) Immediately clean the exhaust filters and increase the frequency the exhaust filters are cleaned by you. Remove and wash them with hot soapy water on a weekly basis.

      • The prep sink, beside the cook station, has a leaking waste pipe. A bucket is catching the leaking water. The pooling water will attract pests.

      • Contract a professional plumber to fix the pipe so it no longer leaks.

      • Observation (CORRECTED DURING INSPECTION):
      • Staff wearing disposable gloves failed to change them when they became dirty or when they changed tasks/jobs. Pathogens are being moved around and contaminating food, which could make people sick.
      • Corrective Action(s):
      • Immediately stop wearing disposable gloves as staff do NOT know how to properly use them. During the inspection, staff took the gloves off and washed his hands.

      • Observation:
      • Baseboard tiles have fallen off the wall in various areas of the kitchen. The walls are not sealed and are not cleanable.
      • Corrective Action(s):
      • Install the baseboard tiles on the wall and seal them, so the wall is sealed and cleanable.

      • 312 - Items not required for food premises operation being stored on the premises [s. 18]
      • Observation:
      • The mop sink is filled with items and unusable, and there are a number of boxes and other items stored on the floor by the hot water tank. It is hard to clean these areas and it will harbor pests. Bathroom sink used as the mop sink instead.
      • Corrective Action(s):
      • Immediately remove all items out of the mop sink and utilize this as another food prep sink. Organize the area by the hot water tank by installing more shelving units to store items on, instead of storing items on the floor.
