- Observation:
- Observed mice droppings on the floor in the back food preparation & storage areas (under the pop syrup storage rack; under the computer station; around boxes on the floor) and in the cupboard below the front drink dispensing machine.
- Corrective Action(s):
- - Immediately clean up the mice droppings.
- - Wash all areas that came into contact with the droppings with hot soapy water, and then sanitize.
- - Wash all floors along the base of all walls and the baseboards along the walls with hot soapy water, and then sanitize. Move all prep tables, storage racks and equipment away from the walls so these areas can be cleaned.
- - Notify your professional pest company of the mice activity and increase monitoring of the premises.
- - Do not store any items on the floor, as it creates an areas where mice may live.

- Observation (CORRECTED DURING INSPECTION): Sandwiches stored in the front u/c cooler were 7.9C as per probe thermometer. The sandwiches contained perishable ingredients (deli meats, cut veggies) which will allow pathogens to multiply when stored above 4C.
- Corrective Action(s): Immediately remove the sandwiches and store them in a cooler that can maintain 4C or colder at all times. During the inspection, staff moved them to the walk-in-cooler, which had a temperature of 1C.

- Observation: The front u/c coolers was 8.1C (as per infrared thermometer). The thermometer found inside the cooler showed the temperature at 10C. Coolers storing perishable items will allow pathogens to multiply in the food, when the temperatures are above 4C. This violation was found in the previous inspection report.
- Corrective Action(s): Immediately remove all perishable food items (proteins, cut veggies, dairy products, etc.) from the cooler, and do NOT store any perishable items in the cooler unless it can maintain the food at 4C or colder. Adjust the temperature of the cooler so that it can maintain food at 4C or colder, at all times. Monitor and record the temperature of the cooler daily to ensure it is working correctly.

- Observation (CORRECTED DURING INSPECTION): Precooked breakfast eggs had an internal temperature of 46F. Eggs were being stored in the front u/c cooler since the morning. This is too warm, as bacteria will grow in them.
- Corrective Action(s): Immediately discard the eggs, and only store the eggs in a cooler that can maintain them at 40F or colder. During the inspection, the eggs were thrown out.

Call a company to repair the cooler, so that it can maintain food at 40F or colder at all times. Only store non-perishable food items in the cooler until it has been fixed. Post a sign on the cooler to ensure all staff know, to only store non-perishable food items in the cooler.
