     • Observation (CORRECTED DURING INSPECTION):
     • The lids for the keg containers were drying, by hanging on plumbing pipes above the 3-comp sink. These pipes are not clean and the lids have become contaminated.
     • Corrective Action(s):
     • Immediately wash and sanitize the lids. Retrain staff on the proper steps and areas to wash, sanitize and dry equipment. During the inspection, supervisor placed lids in the dirty dishes area, so they would be properly washed and sanitized again.

     • Observation (CORRECTED DURING INSPECTION): QUATS based sanitizer in a small bucket in the front counter had 50 ppm QUATS. In order to achieve adequte disinfection of food contract surfaces QUATs concentration must be 200ppm.
     • *Staff changed sanitizing solution during the inspection.
     • *Ensure sanitizer is changed on a regular basis i.e., every two hours or when there is a large organic load to maintian a concentration of 200ppm.
