      • Observation (CORRECTED DURING INSPECTION): 1) 1 half a jug of 0% skim milk measured 16C in the cooler. This may have been sitting on the top counter during the massive lunch rush prior to the inspection
      • 2) Prep cooler insert containers overstocked for some foods. Do not overstock the insert containers as food temperature cannot be maintained above the insert line.
      • Corrective Action(s): Potentially hazardous foods stored above 4C will promote the growth of bacteria and the production of toxins. Monitor the temperature of the noted jug of milk and discard after 2 hours above 4C.

      • Observation (CORRECTED DURING INSPECTION): Wiping cloths observed stored on the counter in use with spray bottles of quat sanitizer and are cleaned with bleach afterwards
      • Corrective Action(s): Do not mix different sanitizers as they will inhibit the effects of each other. Store wiping cloths in an approved food sanitizer bucket with approved food surface sanitizer so that bacteria and other contamination does not grow on the cloths and subsequently spread to other surfaces and employees hands.

      • Observation (CORRECTED DURING INSPECTION): Counter top cooler ambient temperature at 8 degrees C. Food / beverage product at 10 degrees C.
      • Corrective Action(s): Noted cooler was in heavy use during inspection (lunch rush). Potentially hazardous food items (four open cartons of non-dairy milk) were relocated to another cooler at 4 degrees C or less as a precaution until cooler returns to 4 degrees C or less. If cooler does not reach 4 degrees C or less, have cooler adjusted or serviced as needed.

      • Note: No gap observed along threshold of back door and storage room door. Unable to observe / access far area of storage room at time of inspection to assess for potential entry points due to slope of ceiling.
      • Note: All food is covered and sealed. No damage to food packaging, and no rodent droppings observed on shelving / food. Single use cups in affected area are in sealed packaging. Continue to ensure that food, and food equipment/utensils, are protected from potential contamination. No pest activitiy observed in main kitchen area.

      • Observation (CORRECTED DURING INSPECTION): ~Four 32oz. containers of non-dairy milk (opened) were observed in small black countertop cooler. Internal food temperature ranged from 18 to 24 degrees C. Lowest ambient cooler temperature was 12 degrees C. It was stated that non-dairy milk was placed into cooler and opened less than 2 hours ago (during rush period).
      • Corrective Action(s): Above-noted food items moved to another cooler at 4 degrees C or less. Ensure potentially hazardous foods are not stored in this cooler until it is capable of maintaining temperatures of 4 degrees C or less to limit the growth of potential pathogens.

      • Observation (CORRECTED DURING INSPECTION): 1. Package of raw chicken stored above open bucket of whole tomatoes, located in upright cooler.
      • 2. Box of white chocolate chips (located in undercounter cooler) and bin of dry food product (located in kitchen cabinet) observed to be uncovered.
      • 3. Disposable plastic cup observed within chocolate chips noted above.
      • Corrective Action(s): 1. As raw chicken was completely sealed and not observed to be leaking, chicken was relocated so that it is not stored above ready-to-eat food/beverage. Ensure that raw animal products (for example, raw chicken and eggs) are not stored above ready-to-eat food/beverage to protect items from potential contamination in the event of leakage.
      • 2. Items covered. Ensure all food is properly covered to protect from potential contamination.
      • 3. Cup discarded. Disposable plastic cups may potentially deteriorate with use and are not intended to be washed and sanitized. Ensure scoops are provided that are smooth, non-toxic, durable, easy to clean and sanitize, and suitable for the intended purpose. Scoops are to have handles.

      • 2. Handle of faucet at two-compartment sink is missing. Note: Locking pliers are in place where handle is missing. Makeshift handle is functional.
      • Corrective Action(s): 1. Have above-noted cooler serviced, or provide a new cooler, so that it is in good working order and capable of maintaining food at 4 degrees C or less. Date to be corrected by: June 30, 2022.
      • 2. Provide an appropriate handle for above-noted faucet. Locking pliers are not designed to be used as a handle and are not designed to be properly cleaned and sanitized. Date to be corrected by: July 12, 2022.

      • Observation (CORRECTED DURING INSPECTION): Toppings for sandwiches (sliced tomatoes, cucumbers, dairy products / cheese) stored at a temperature of 12C. The temperature of these toppings remained at 12C throughout the course of the inspection.
      • Corrective Action(s): Toppings (potentially hazardous foods) discarded. All potentially hazardous foods must be kept at 4C or less at all times to prevent the growth of bacteria that could cause foodborne illness.

      • Observation (CORRECTED DURING INSPECTION): Interior of ice machine has a buildup of mould-like residues and mildew-like residues, especially at the lip of the machine where ice is dispensed, and the sides of the machine.
      • Corrective Action(s): Ice machine is to be emptied. The interior is to be washed, rinsed, and sanitized in accordance with the manufacturer's directions. Employee had begun to empty the machine and commence the cleaning process at time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Bleach spray bottle was at >>> 200 ppm.
      • Corrective Action(s): Only 1/2 teaspoon of bleach per litre of water is required. An excessive concentration of bleach can leave behind a chemical residual on your food contact surfaces. The spray bottle was diluted and was measured at between 100-200 ppm at time of inspection.

      • - Area underneath the sandwich display cooler needs to be cleaned
      • Corrective Action(s): The dust and grime in the aforementioned areas need to be removed. Ensure that a deep clean is done of the kitchen area and maintain food processing areas in good sanitary condition.
