      • Observation (CORRECTED DURING INSPECTION): 75% cooked chicken strips are stored on the metal prep counter between the cookline and prep cooler measured at 37C with a probe thermometer

      • Observation: Few large flies noted outside the washroom sitting on the items inside the cabinet. Fly light was unplugged at time of inspection

    • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Food items stored within small cooler located to the left of the cook line were measured at internal temperatures of 8 to 12 degrees C. It was stated that items were placed in cooler in the morning (over four hours ago).
      • Corrective Action(s): Potentially hazardous food items discarded (including small quantities of raw beef patties, raw white fish, and chowder). Ensure cold potentially hazardous (perishable) food items are maintained at 4 degrees C or less in order to limit the growth of potential pathogens.

      • Observation: 1. Biofilm observed on some interior surfaces of ice machine.
      • 2. Residue observed on blade of stored deli slicer.
      • Corrective Action(s): 1. Discard ice. Ensure interior surfaces of ice machine are properly cleaned, rinsed, and sanitized. Allow to dry completely before preparing new ice. Ensure ice machine interior is cleaned and sanitized regularly, at a frequency needed to limit biofilm growth and protect ice from potential contamination. Date to be corrected by: Today.
      • 2. Deli slicer was removed from storage to be disassembled, washed, rinsed, and sanitized during inspection. Ensure deli slicer is properly washed, rinsed, and sanitized following each use to prevent potential cross contamination.

      • Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was measured at over 400 ppm quats (quaternary ammonium compounds) in all spray bottles (five total).
      • Corrective Action(s): Contents of spray bottles discarded. Santiizer was remade based on manufacturer's label instructions and was retested at 200 ppm quats. Ensure sanitizer is maintained at concentrations required for proper sanitizing of food contact surfaces (for quats, at 200 ppm or as specified on product label for food contact surfaces). High levels of quats on surfaces may potentially contaminate food.

      • Observation: Pest (mouse) droppings observed in few areas, including:
      • - Store room (lower shelves, floor to wall junctions)
      • - Lower shelf located near cook line where pans are stored.
      • - Hot water tank room.
      • One bag of flour had what appeared to be a potential chew mark on the exterior.
      • Corrective Action(s): 1. Bag of flour discarded as a precaution. Note: No other bagged or open food items in store room. Store room area contains bottled and canned beverages, dry food product in covered bin, bagged/boxed single use utensils, and canned foods. No other food/utensils observed to be potentially contaminated. Other items not observed to be affected.
      • 2. Pans removed and placed through dishwasher. Area where pans are stored was cleaned and sanitized during inspection.
      • 3. Staff had started to clean and sanitize remaining affected areas. Ensure above-noted areas are thoroughly cleaned and sanitized.
      • Note: Premises is serviced by a licensed pest control operator. Most recent pest control report, dated Aug 16, 2022, was reviewed during the inspection. Operator to contact pest control for re-service following thorough cleaning.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: 1. Back door to kitchen observed to be open for extended period during inspection when no deliveries were being received.
      • 2. Holes in walls observed in store room area.
      • 3. Oil and food debris observed on floor, equipment, and ventilation canopy of cook line. In addition, debris observed on some kitchen shelves and dish pit floor.
      • 4. Small gap observed under store room exterior door.
      • 5. Debris and/or items not required for business use stored outside of restaurant near back door to kitchen and store room.
      • Corrective Action(s): 1. Back door closed. It was discussed with the operator that a proper fitting screen door that excludes pests must be installed if back door is to be kept open.
      • 2. Ensure all holes are properly sealed to prevent potential entry of pests. Date to be corrected by: August 24, 2022.
      • 3. Ensure all of the above-noted areas are properly cleaned and sanitized. Food debris and oil may potentially attract pest activity. Date to be corrected by: August 22, 2022.
      • 4. Ensure gap is minimized (for example, a door sweep may be installed). Date to be corrected by: August 22, 2022.
      • 5. Ensure above-noted items (e.g. old equipment, parts) are removed from the noted areas to limit potential harbourage areas for pests. Date to be corrected by: August 22, 2022.

      • Observation: Small cooler located to the left side of the cook line does not appear to be capable of maintaining food at 4 degrees C or less.
      • Corrective Action(s): Have cooler adjusted, serviced, or replaced so that it is capable of maintaining food at 4 degrees C or less. Do not store food items in this cooler until it is verified that it is capable of maintaining temperatures of 4 degrees C or less. Date to be corrected by: August 19, 2022.

      • Observation: Few cold holding units observed to have broken or missing thermometers.

      • Corrective Action(s): Required operator to clean and sanitize the dicer and to have it cleaned when not in use.

      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher did not have sanitizer at the time of visit. Requested operator to replace the sanitizer to ensure that residual sanitizer is present after the final rinse cycle.
      • Corrective Action(s): Required operator to replace the sanitizer and ensure that it is replaced as soon as they run out. Ensure to have test strips to test for residual chlorine. Staff replaced the sanitizer at the time of visit and the dishwasher proved to be in good working order; detected 100 ppm of chlorine residual after final rinse cycle.
