- 29(2)(a) - INADEQUATE MAINTENANCE, CLEANING, & SANITATION PROGRAM.
- All food & packaging must be stored off of the Floor (corrected). Store raw foods below RTE foods (corrected). Basement requires thorough cleaning to remove food soils, refuse and miscellaneous items from entire storage area. Repair all holes in ceiling and also ensure all exposed insulation is covered or removed. Post handwash procedure sign at handwash sink (kitchen). Replace expired test strips for sanitizer.
- 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
- Rapid cool foods not for immediate service to meet rapid cooling curve. Gravy was put on ice during inspection. Operator to validate active rapid cooling curve. One box of potentially hazardous foods was discarded during inspection. Do not store eggs in unsanitary and unrefrigerated crawlspace.
