Check & ensure all spray bottles have proper concentrations routinely. Correct function of sanitizing spray arms in conveyor dishwasher (corrected during inspection). Ingredient bags once opened must go into tightly covered food grade containers.

- Grease trap cover must be tightly sealed and meet plumbing code and requirements of local plumbing authority. Clean light fixture in front of walk-in cooler and finish construction to eliminates holes in wall, where reefer relocated from, and provide a cleanable surface. Clean front servery 4 compartment fridge and under all equipment. Correct drip on copper drain pipe that has started in front servery. 3 light bulbs out inside exhaust canopy. Expired sanitizer product in janitorial closet to be removed and supply replenished.

A maintenance, cleaning and sanitation program must include procedures to ensure that the food establishment and equipment are maintained, cleaned and sanitized.
- Fix receiving door such that it functions properly to ensure verminproof (temporary correction made during inspection). Provide accurate thermometer for monitoring hot hold unit in front server and bulbs inside must be designed for that use (shielded/shatterproof). Clean bottom compartments of 4 door fridge. Seal / repair/replace grease trap and resolve insect issue at this location.

- Walk-in cooler not holding <=4C in foods. Few items >4C for >4 hours discarded by operator. Other Potentially hazardous foods were relocated to other working refrigeration. Unit must be serviced / adjusted, condensate issue resolved, and corrected and holding <=4C / 40F in foods before reuse. Operator to manage issue.
