      • Clean storage rack in walk-in cooler. Improve lighting in walk-in cooler to eliminate shadows and easily clean.

      • Wallace main dining room fridge not holding food <= 4C were voluntarily discarded by operator (dairy products). Potentially hazardous foods (PHF's) held >4C for >4 hours were discarded and <4 hours were relocated to other working refrigeration. Kitchen beverage fridge not holding <=4C in foods.       • Clean under equipment of cookline, bakery, and beverage areas. Clean top of exhaust canopy in bakery area.

    • 29(2)(a) - FAILING TO ENSURE MAINTENANCE, CLEANING & SANITATION PROGRAM INCLUDES PROCEDURES TO ENSURE FOOD ESTABLISHMENT AND EQUIPMENT ARE MAINTAINED, CLEANED AND SANITIZED.
      • Clean under equipment of cookline, bakery, and beverage areas. Clean knife holder (corrected during inspection) and top of exhaust canopy in bakery area. Provide brighter lighting in walk-in cooler (>=540 lux)., replace bulb in double door fridge, and correct lighting in mechanical exhaust canopy. Provide cleanable and very durable design platform to store produce >= 6in. / 15cm. off the floor in walk-in cooler.
    • 34 - OPERATOR FAILING TO ENSURE FOOD & FOOD INGREDIENTS ARE STORED IN A MANNER THAT PREVENTS CONTAMINATION AND ADULTERATION.
      • One Ready to Eat Food item stored below raw meats was relocated. Store foods in store room and walk-in cool >= 6in. / 15cm. off the floor.
