    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1) Meat debris was found on meat slicer's hard to reach areas. 2) Dried dough on the dough machine. The dough machine was not cleaned and sanitized from previous night.Clean and sanitize meat slicer and dough machine daily.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Large blue plastic containers were used to store cheese and flour. These containers are not food grade.Use food grade containers for foods.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Bar soap was used in the staff bathroom handwash sink.Provide liquid soap for handwashing.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Only two mechanical mouse traps without glue boards were found in the facility. No records were available for review.Provide pest records.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Clear tape was on the prep cooler insert handle. Fix the prep cooler insert handle.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Cardboards were used to line the kitchen shelves. Remove cardboards and clean shelves when they get dirty.2) Walk-in cooler light was burnt out. Fix the light.
