- Observation: 1. Tongs observed to be stored on glass display case on Chest freezer (Kelvinator Commercial, for patties/fries).
- Corrective Action(s): 1. Store tongs in a food grade container. As tongs are used to handle raw foods, both tongs and container should be cleaned and sanitized every 2 hours to ensure tongs are not harbouring pathogens and contaminating food.

- Observation: 1. Gap observed between receiving door and floor. Light observed coming in from the outside.

- Observation: 1. Food debris (fries) observed under deep fryer.
- 2. Cardboard box observed next to deep fryer, against wall. Operator stated this was used to absorb oils that may spill when transferring fries to warmer.
- Corrective Action(s): 1. Please clean immediately. Monitor area and clean as needed.
- 2. Please remove/replace cardboard box at least once daily.

- Observation: 1. Baffles of range hood over deep fryer missing panels. Operator stated equipment has been ordered and awaiting delivery. Unknown arrival date due to US tariffs and supply chain.
- 2. Ice formation observed on condenser of walk-in freezer.
- 3. Ice foramtion observed in 2 door upright freezer (cake #2, back hallway)
- 4. Heavy conedensation observed on display windows of both 3 door display freezers for ice cream cakes.
- Corrective Action(s): 1. Please ensure range hood vent is cleaned more frequently during the waiting period.
- 2. Remove ice formation. Monitor to see if it is reoccurring. If so, contact refrigeration technician to have unit assessed / serviced. Food products that come into direct contact with ice is to be treated as contaminated.
- 3-4. Operator stated refrigeration technician has already been contacted regarding issues and door seals are scheduled for replacement. Food products that come into direct contact with ice is to be treated as contaminated.
