    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Owner stated that all utensils used for preparing, serving food are cleaned/sanitized once per day. Owner was advised that utensils that are in contact with food must be cleaned/sanitized at a minimum of every two hours or switched out with clean/sanitary ones. Utensils that come in contact with food are prone to bacterial growth with time which can lead to cross contamination foods/food surfaces etc. which can cause foodborne illness. Clean/sanitize or change our all utensils with clean/sanitary ones every 2 hours when the sanitizer buckets are getting changed out. Management advised staff of 2 hour cleaning/sanitizing requirement for utensils and signage was osted in food preparation areas. There was a knife near the salad prep area that was stored in an enclosed holder. The knife is supposed to be cleaned/sanitized prior to putting in the container, but the knife was soiled with food debris as was the magnetic holder. Replace the enclosed holder with one that is open so the unit can be easily cleaned and sanitized. The knife must be cleaned and sanitized at a minimum of every two hours to reduce the risk of cross contamination. Ice cream machines are cleaned and sanitized, manually, every 2 days. Blizzard mixer is rinsed after each use and cleaned and sanitized throughout the day. Used oil collection system in place. Cooler and hot held inserts are not topped up - they are cleaned and sanitized or swapped out with clean/sanitary ones prior to filling. This applies to plastic condiment bottles as well.
