    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Raw meats are stored in a separate area away from ready to eat foods and produce. In island cooler in retail meat area there were fresh packaged turkeys that were next to ready to eat, packaged pepperoni sticks. Staff were advised to physically separate the two to reduce the risk of contamination of the pepperoni packages - this was done at the time of the inspection. Please store fresh meats in a cooler that is separate from prepared/ready to eat products. The wall mounted paper towel dispenser in the deli area is located across from the hand sink. There was a cart with pizza shells parked below the paper towel holder. Please either do not have the cart of food below the paper towel holder or move the paper towel holder to another location to reduce the risk of food contamination. Staff covered the food at the time of the inspection and do have a standing paper towel holder they can use. If you can get a standing paper towel holder that is easy to use and does not require the user to hold on to the role of paper towel to tear off a piece, then this is OK - but the wall mounted dispenser would be best.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Exterior doors appear to close tightly with the exception of the overhead door in the receiving area in the back produce area - there are large gaps around the door. Manager stated that the door is in the process of being fixed as a truck ran into it. Please ensure this door is replaced/repaired or that rubber weather stripping is installed to close up the gap but still allows the door to open. Please have these corrections made within the next 30 days. Please provide a photo when the door has been repaired.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Ventilation system in deli area is professionally cleaned every 6 months, staff take down vents covers on a weekly basis and clean/sanitized. All utensils and equipment were in good repair. Bulk storage bins in bakery are cleaned/sanitized weekly, exteriors done daily. Wooden butcher block top counter in bakery area is in good repair. There are wooden drawers on this counter where the paint is starting to peel off. Please sand the drawers down and re-paint with a highly scrubbable paint or clear coat so that all the surfaces are smooth, easy to clean and impermeable to moisture. Meat slicers in deli department are taken apart, cleaned and sanitized every 2 hours. Meat grinder in meat department is kept in walk in cooler and is cleaned and sanitized at the end of each day. Meat saw is cleaned/sanitized every 4 hours and after each species. There are different production areas for different meat species. Ice scoops at ice machine in back area were stored in a cardboard box. Manager removed scoops at the time of the inspection to have them cleaned/sanitized. The scoops are normally stored in plastic bags which are changed out daily and scoops are cleaned/sanitized daily. *Cutting boards in produce area are discolored and some have deep cuts. Please ensure the cutting boards are scrubbed with soap and water then sanitized. A soak in bleach solution will likely help to remove discoloration. Replace cutting boards if they are in disrepair. Knives in back produce area are kept on magnetic holders.
