      • Observation (CORRECTED DURING INSPECTION): Three colored plastic ice packs were stored inside the ice bin near the take-out window. This presents a cross contamination point.
      • Corrective Action(s): Staff removed the plastic ice packs, discarded the ice in the ice bin, thoroughly cleaned and sanitized the inside walls of the ice bin during the inspection. Ice can now be stored in the ice bin.

      • Observation (CORRECTED DURING INSPECTION): Gravy's temperature measured at 40 C in hot holding unit. Gravy stored in unit below 140F (60C) for more than 2 hours. Also, Operator measured gravy's temperature with probe thermometer. Gravy was at 104F. Operator discarded the food at the time of this inspection.
      • Corrective Action(s): Esure gravy is stored at or above 140F. Adjust temperature of this unit so that can keep food temperature at or above 140C(60C).

      • Observation (CORRECTED DURING INSPECTION): Ice scoop stored directly on ice in ice maker bin. Ice scoop handles may be contaminated as it is handled by different staff. Storing ice scoop on ice directly may contaminate ice as well.
      • Operator removed ice scoop from the ice bin and stored in a clean container at the time of this inspection.
