      • 3. Beverage cups being used as ice scoops at front bar and stored directly on the ice.
      • Corrective Action(s): 1. Operator transferred the eggs to the lowermost shelf during the inspection.
      • 2. Staff covered the containers of food during the inspection. Ensure all foods are covered during storage.

      • Observation (CORRECTED DURING INSPECTION): Mechanical low-temperature dishwasher not dispensing sanitizer during final rinse cycle; dishwasher was not turned on prior to inspection. Operator stated the sanitizer concentration was checked the previous day and measured 50 ppm chlorine. Operator explained warewashing is not conducted until after lunch service, so no dishes have been done today.
      • Corrective Action(s): Operator repaired the dishwasher such that the chlorine sanitizer level measured 100 ppm at plate level after final rinse. Please maintain a daily record keeping log for sanitizer level monitoring.

      • 4. A group of tiles on cookline are missing and gaps are filled with water due to leaking prep cooler. A tile is also missing at back kitchen door, and at top of staircase.

      • Corrective Action(s): 1. Replace front piece of hot holding unit for worker safety and to prevent bacterial growth. Duct tape is not an acceptable material in kitchens. Correct within two weeks.
      • 2. Finish covering the walls behind the dishwashing sinks with stainless steel. Correct within two weeks.
      • 3. Install new stainless steel microwave shelf. Correct within two weeks.
      • 4. Install tiles so that whole kitchen floor is covered for worker safety and to allow for adequate cleaning.
