- 1. Utensils for used for mixing was stored in stagnant water that measured 23C. Utensils must be stored in hot water maintained at >60C or iced water maintained at <4C, or in a sanitizer solution of 100ppm of chlorine (bleach) or 200ppm of QUATS to prevent the growth of bacteria. The operator discarded the stagnant water and filled the container with hot water that measured 68C at the time of the inspection.2. Clean utensils stored directly underneath the paper towels and hand soap in the back area. Utensils must be stored in a manner that protects it from contamination. Please refrain from placing any utensils underneath the soap dispenser or the paper towels as this may result in contamination from the droplets. The operator moved the utensils away from the sink at the time of the inspection.
